Take the risk to prepare this Raw Cherry Cake

For this year birthday I decided to make something different. So i stop at the idea of a raw cake. For a couple of months so far we are visiting some restaurants with raw kitchen and i thought that ''why I can't do that?''
And the result turned out pretty good.



However the main idea was that I wanted something new, something fresh. I'm not sure if it was because of the next year passing.
I want to take some risks. I know now that no matter what I do, I'll be ok at the end.
Only the people who risk, can win. You wont get new results by doing the same thing, right?
And if for some reason it doesn't work out, you will be the only judge to yourself.


Life is passing by and you are not realizing how much time passed until it gets too late.
You should not be afraid to take risks. Look it that way. You'll either win, either get good experience.
I know that some of you're probably scared if you imagine the moment when you wont be able to pay your bills, to look for your children, to pay the mortgage and ect.
But do you know what?
If you stay like this, you'll live a boring life with no memories to tell to your grandchildren.


So get out of your comfortable couch and take some risks for your life!

Raw cherry cake
Ingredients:
Base:

  • 2 cups raw cashew;
  • 2 cups dates;
  • pinch of salt;
  • 1/2 cup coconut;
  • 2 tbsp honey;


Cocoa layer:

  • 2 big avocado;
  • 1 tbsp chocolate liqueur;
  • 6-7 tbsp unsweetened cocoa;
  • 6-7 tbsp honey;
  • 1,5 cup raw soaked cashew;
  • 1/2 cup dates;


Cherry layer:

  • 1.5 - 2 cups raw hazelnuts;
  • 2 cups cherries;
  • 3-4 tbsp honey or agave syrup;
  • 3 tbsp lime juice;
  • lime zest;
  • 1/2 cup coconut;
  • * you can add some coconut butter.



Preparation:
Base: Pour all ingredients into a blender and stir until you get coarse crumbs . It should be sufficiently sticky and sweet so try if you want to add some sweetener.
Add some unsweetened cocoa at the bottom of the cake pin and pour the mixture. Press with hands and shape the base.
Put into the fridge for 20-30 min to cool.



Cocoa layer:
Unbone the dates and cut the avocado into pieces. Pour the cashew nuts and the dates into the blender and stir until you get smooth and homogeneous mixture.
Then add the liquor, the cocoa and the honey. Mix once again and after that pour onto the base. Spread it evenly and put the cake back into the fridge.


Now it's time to make and the Cherry layer.
We can do that by wringing the cherries and remove the pyrenes.
Then blend the hazelnuts and after that add the cherries, so they can stay at large pieces. Add the others ingredients and if it is not enough thick, add some more hazelnuts or coconut. They will absorb the moisture.
Pour the mixture into the cocoa layer and put back into the fridge for a couple of hours or better, for the night.
